I think it's that time of the year for the annual fall post. The most confusing part of the year (for me) and it mostly has to do with food. I lean into fresh ingredients and produce but now that fall is here and we only have pumpkins, what am I supposed to cook?!
I am craving warm cozy food, some soups, and trying some oven-baked chicken recipes but at the end of the day, are they going to be as satisfying as my bucket of raspsberries? Probably not and that makes me sad.
Fall recipes are also so long. We made meatloaf the other night and that took 40mins to cook! We had to get a pre-dinner snack to keep the spirits alive. And of course, the meal wasn’t as good as the wait made it up to be.
I guess there isn't much I can do about fall and winter foods. I understand how important it is to eat with the seasons. I bet you there is some science behind how humans digest strawberries better in summer versus winter. What I’m trying to say is I need to be accountable for trying new fall recipes. I want to get in on the fall hype and to do this I need to find good meals.
To keep me on track I have found 3 recipes for me to try in the next month. I will report back here with my findings. Did I like them? Did this post change my mind about Fall? I hope so!
For my selection of recipes I will follow the following guidelines:
No cinnamon (It wrecks my body)
No pasta (it's too easy)
Has to be something I haven't tried
Time is of the essence, if I need to prep in advance, that's a no.
So here are the recipe contenders that will make me love the cold (I hope):
Hungarian Goulash - I have never made goulash but this recipe sounds delicious. We will have to pair it with some mashed potatoes to add on to the warm cozy meal idea. I am excited to try this one, I’m a big savoury person so this will be right up my alley. This one is on the longer prep time but I will let this one slide as I think it's still doable.
Pumpkin coconut curry - There are pumpkins everywhere at a very affordable price so I have been curious to try a curry recipe with them. This seems like the perfect combination for me. This recipe also teases a little bit of summer with the fresh flavours.
Baked Tuscan Chicken Breasts - Creamy chicken would be the perfect pair for pasta but this time I will try to pair it with quinoa. It won't be as satisfying but I’m hoping the chicken will stand its ground.
We have a bit of a mission on our hands. I will report back in a month with my findings. These are just ways for me to enjoy the start of the cold month ahead. Who knows, maybe this experiment will make me love the fall.
